Annual Meeting Highlights: Cooking with Top Chef, Louis Maldonado

Western Growers’ 89th Annual Meeting being held November 2-5 in Las Vegas has its share of stars and great food.  What else would you expect in Vegas?

Attendees will get their chance to experience both during one event on Monday, November 3, when they see the Bravo Network’s Top Chef finalist Louis Maldonado in action in the Bellagio’s Tuscany Demonstration Kitchen. Chef Louis plans to dazzle the crowd by preparing a variety of fresh fruit and vegetables in unique and interesting ways. 

“Dining in modern America is about flavorful, delicious food,” Chef Louis told WG&S Magazine earlier this year. “I think it is also important to really pay attention to what you’re eating. Food really matters and it’s a good idea to know where your food comes from.” 

Produce leads the way on the menu at Spoonbar (his restaurant in Healdsburg, California). There, 60 to 70 percent of the food is produce based, followed by fish and then meat. 

“This is our order of importance,” said Chef Louis. “This is what we want to feature first.”
