World-class chef and Hawaii native, Chef Sheldon Simeon, used fruits and vegetables to dazzle Top Chef Workshop participants at this year’s 88th Annual WG Annual Meeting yesterday in Honolulu. Chef Simeon demonstrated his techniques and abilities during the 90-minute workshop that featured such delectable dishes as charred cabbage with dashi and bok choy with oyster sauce. Rachel Barkely and Nikki Patricio, the wives of former WG Board Chairs, Robert Barkley and Stephen Patricio, assisted as souz chefs for the event.
Chef Sheldon was born and raised on the Big Island and began his culinary career at Leeward Community College on Oahu. He is a two-time James Beard finalist and, in addition to being voted “Fan Favorite,” was a top three finalist for season 10 of Top Chef -- Seattle.
Chef Sheldon is currently the executive chef of Mala Wailea and will be opening a brand new restaurant by the end of the year named Migrant.
